Herbs Fried Rice

Weekend bzee sangat. Hari Sabtu pegi jumpa anak yang duk Shah Alam tu. Time ni dia tengah cuti semester tapi tak balik kena lah pi jenguk sana….jalan-jalan, makan-makan….sampai lah ke petang. Ingatkan lepas hantar anak balik ke rumah….then balik KL….tapi hubby cakap malam lah sikit baru balik. Dah bersantai kat situ, sempat juga lah saya masak untuk makan malam sekali. Lepas makan, kemas-kemas dapur dan solat Isyak baru lah kami beredar balik KL. Sampai umah dah kol 10, lepak habis. Hari Ahad lak biasa lah beli belah barang keperluan dapur. Tu yang tak ada masa nak mengupdate tu. Biasalah cuti hujung minggu kan….macam-macam hal.


Ini adalah nasi goreng sarapan pagi kami semalam. Resepi saya cedok dari dapur Gert. Disebabkan hari minggu kan segala bahan basah dalam fride dah kehabisan stok….cuma sotong je yang ada….itu pasal la sotong aje yang nampak kat dalam gambar tu. Tapi tak mengapalah nasi goreng ini tetap sedap dan saya suka dengan aroma daun limaunya….wangi jer…thanks Gert for the nice recipe….

HERBS FRIED RICE

Ingredients

  • 3 cups of cooked rice – overnight rice prefer
  • 1 piece of chicken breast – cut into small cubes
  • 10 pieces of shrimps – peel and deveined
  • 2 eggs – beaten
  • 2 shallots – sliced thinly
  • 2 cloves garlic – finely chopped
  • 1 tsp finely chopped ginger
  • 1 lemon grass – removed the hard outer layers and slice thinly
  • 3 bird eye chilies – cut small
  • 1 sprig of curry leaves – remove rib, roll it up and sliced thinly
  • 3 kaffir lime leaves – remove the rib, roll it up and sliced thinly
  • 1 tbsp fish sauce
  • 2 tbsp soy sauce
  • Salt and pepper to taste

Method

  • Heat up wok on high heat and add in 2 tbsp of olive oil. Put in shallots, ginger and garlic and stir fry until fragrant. Add in chilies, lemongrass, curry leaves and kaffir lime leaves. Continue to stir fry until you can smell all the spices.
  • Add in the chicken and continue to stir fry until the chicken changes color. Add in shrimp; stir fry until the shrimp is slightly pink.
  • Push all the meat to the side of the wok, add in another tbsp of oil, and pour in the eggs. Scramble the eggs for a few second or until half cook, add in the rice and all the seasoning.
  • Continue to stir fry for another 3 minutes. Check seasoning, dish out and serve warm.
